Books I own and have read:
Software
Reversing Secrest of Reverse Engineering, Eilam
Exploiting Software, Hoglund and McGraw I have rootkits, just no time to read it though ;)

Hacking the Xbox, Huang Had it for a few years, but never got a chance to read it...I guess I'll do that soon too :)

Offensive Computing Hosts some good material with regard to reversing malware and exploits,
http://www.offensivecomputing.net/
and so does the code breakers journal:
http://www.codebreakers-journal.com/

There is another good information source with some step by step analysis of a target which was really helpful.

There are some other forums that host challenges and crackmes, but I don't remember their url or the key words I used to find them.

My advice would be start with the Eilam's book and fan out.  It focus mainly on Windows, but you can do google searches to find pertinent information on other OSs.  Also, once you have a basic understanding you can start to google for some academic papers as well.

Hope this is helpful.

One site I have perused (good challenges and some good write-ups on the solutions) for crackmes is http://www.crackmes.de. I will add +1 for Kris Kasperski's books -- I found Hacker Disassembling Uncovered to be useful even as someone with a decent amount of RE experience.
